Do These Silicone Sheets Work?

The thought of baking cookies with silicone for most of us probably doesn’t conjure images of Martha Stewart telling us about all her “good things” for the kitchen. Truth be told, how many of us out there are ready to admit that while we certainly are familiar with cookies, we don’t know what silicone is anyway? I must be counted among those not in the know, and the worst part about this is that even as I give you the definition, it’s not even really clear. Be brave and read on anyway.

According to the dictionary, silicones are stable synthetic compounds (polymers) with lubricating properties that mimic organic, carbon-based compounds such as petroleum, animal fats and vegetable oil. (I told you. Do you believe me now?) It is a term much like plastic, covering a wide range of material and properties. Silicone has been around about 60 years, and is often used in bathroom caulking, breast implants and the heat-resistant tiles on the bottom of the space shuttle. Cooking with silicone-based products is a fairly new phenomenon, which has become more and more popular due to several time and money saving features.

The Silicone Cookie Sheet is easy to clean with just water applied to the surface. You don’t need costly foil when you use these sheets and that is a considerable saving. (I myself have thought about investing in aluminum foil many times since my oil well went dry.) Probably the most economical aspect about silicone baking sheets is that you buy them and use them for much longer than traditional items. They also dissipate heat rapidly and can be molded into many cool shapes and uses that you never would have thought of without help from cooking sherry and never could do with the old kitchen standbys.

Does this have the same effect as an airbake sheet - where it insulates the bottom more so the cookie won't have a crispy bottom?
